Ingredients:

  • 3 tablespoons lime juice
  • 3 tablespoons canola oil
  • 2 teaspoons reduced-sodium soy sauce
  • 2 teaspoons fish sauce, (see Ingredient Note)
  • ½ teaspoon crushed red pepper
  • 450g chicken tenders
  • 2 tablespoons smooth natural peanut butter
  • 2 tablespoons 'lite' coconut milk, (see Tip)
  • 1 tablespoon lime juice
  • 2 teaspoons reduced-sodium soy sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon crushed red pepper, or to taste

Instructions:

  1. For chicken preparation: Blend together 3 tablespoons of lime juice, oil, 2 teaspoons of soy sauce, fish sauce, and 1/2 teaspoon of red pepper in a shallow dish; add chicken and ensure it's coated. Allow it to marinate in the fridge for 15 minutes.
  2. To make the peanut sauce: Combine peanut butter, coconut milk, lime juice, soy sauce, brown sugar, and red pepper until a smooth mixture is achieved.
  3. Heat up the grill to high heat. Skewer each chicken tender onto a wooden stick. Grill until fully cooked and there is no pink in the middle, approximately 3 minutes per side. Serve either warm or cold with the Spicy Peanut Sauce.
