Grapefruit, beet, and radish salad

Ingredients:

  • 3 pink grapefruit
  • 450g yellow beets (about 4 small), scrubbed, trimmed, and very thinly sliced
  • 8 assorted radishes, scrubbed, trimmed, and very thinly sliced
  • 2 tablespoons olive oil
  • Kosher salt and black pepper

Instructions:

  1. With a sharp knife, carefully remove the outer skin of the grapefruits, making sure to eliminate as much of the white pith as you can. Allow the pieces to drop into the bowl, then extract any remaining liquid from the fruit into the bowl before throwing away the leftovers.
  2. Over a big, broad bowl to capture the juices, separate the grapefruit into slices, cleanly detaching the flesh from the tough skin.
  3. Allow the pieces to fall into the bowl, then press out any leftover juice from the fruit into the bowl before disposing of the remains.
  4. Combine the beets, radishes, and olive oil in the bowl and mix well. Season with salt and pepper.
