Grapefruit and avocado salad with ginger-cassis dressing

Indulge in a zesty grapefruit and creamy avocado salad drizzled with a flavorful ginger-cassis dressing. A burst of tangy, citrusy flavors in every bite!

Ingredients:

  • tablespoons extra-virgin olive oil
  • tablespoons crème de cassis (black-currant liqueur) or grenadine
  • tablespoons chopped shallots
  • tablespoons minced peeled fresh ginger
  • teaspoons Sherry wine vinegar
  • large Ruby Red grapefruits
  • large head of butter lettuce, leaves separated
  • large avocado, halved, pitted, peeled, sliced

Instructions:

  1. Combine the initial 5 components in a small bowl and mix thoroughly. Season the dressing generously with salt and pepper.
  2. Remove the peel and white part from the grapefruits. Slice each grapefruit into 4 pieces horizontally, then cut each piece in half widthwise. Place lettuce leaves on a serving dish, ripping the larger ones in half. Add the grapefruit and avocado on top. Pour the dressing over it; then add a sprinkle of salt and pepper.
