Grape and honey dew green salad with mint splash

Ingredients:

  • 6 cups honey dew melon, peeled and seeded and cut in 1-inch cubes
  • Mint Splash (recipe follows)
  • 1/2 cup lime juice, fresh
  • 2 tablespoons honey
  • 1 1/2 tablespoons mint, finely chopped

Instructions:

  3. 2. Transfer to a fresh container, mark with a label and date, put your initials on it, and store in the refrigerator.
  4. MINT SPLASH:
  5. 1. Mix lime juice and honey until honey dissolves.
  6. 2. Stir in the mint leaves.
  7. Place in a fresh container, label it, date it, put your initials on it, and store in the refrigerator.
  8. This is also enjoyable to prepare with three different colors of grapes.
