Grandma's potato salad

Ingredients:
- 1360g red potatoes
- Salt
- 1 cup mayonnaise
- 3 tablespoons chopped fresh parsley
- 2 tablespoons yellow mustard
- 2 stalks celery, chopped
- 2 chives, chopped
- 1 white onion, finely chopped
- Freshly ground black pepper
- 6 hardboiled eggs, chopped
Instructions:
- Add the potatoes and 2 generous tablespoons of salt to a large pot of water. Bring the water to a boil and simmer until the potatoes are easily pierced with a fork, which should take around 10 to 15 minutes. Cut the potatoes into 1/2-inch cubes.
- In a spacious bowl, combine the potatoes, mayo, parsley, mustard, celery, chives, onions, salt, and pepper. Mix until the potatoes are well coated with the dressing before gently folding in the eggs. Stir the potato salad delicately to avoid breaking the eggs. Serve promptly.
