Gorgonzola and grape salad

Indulge in the perfect blend of creamy Gorgonzola cheese with sweet grapes in this delightful salad. A tantalizing mix of flavors that will surely tantalize your taste buds.

Ingredients:

  • 1/2 cup aged red wine vinegar
  • 1/2 cup fresh lemon juice
  • 1 1/2 teaspoons sugar
  • 1 tablespoon salt
  • 5 cloves garlic
  • 1 1/2 small shallots, minced
  • 2 1/2 cups extra-virgin olive oil
  • 1 1/2 teaspoons freshly ground black pepper
  • 20 cloves garlic
  • 1 1/2 cups water
  • 1/4 cup sugar
  • 2 cups seedless green and red grapes, halved
  • 1 cup Gorgonzola, crumbled
  • 3 heads frissee lettuce, or other hearty green

Instructions:

  1. Dressing: Combine red wine vinegar, lemon juice, sugar, salt, and garlic cloves in a blender and blend on high speed. Gradually pour in the extra-virgin olive oil while the blender is running. Season with black pepper and refrigerate the dressing for 24 hours before using. 
  2. To make candied garlic: Grease a baking sheet for the prepared garlic. Cook the garlic in a large skillet with water over medium-high heat. Boil the garlic until it's cooked but still firm, approximately 8 minutes. The water should be mostly evaporated by now. Add sugar to the skillet with garlic and cook over medium heat, stirring occasionally. After a few minutes, the sugar will caramelize. Stir the garlic constantly to ensure they are evenly coated with the caramelized sugar. Continue cooking until the garlic turns golden brown. Be attentive as this process happens quickly. Transfer the garlic to the greased baking sheet to cool. 
  3. For the salad: Combine grapes, Gorgonzola cheese, and candied garlic in a large mixing bowl. Pour 3/4 cup of dressing over the mixture, ensuring everything is well coated. Add lettuce and toss the salad. Adjust seasoning to taste.
