Golden beet and citrus salad

Ingredients:

  • 910g golden beets
  • 3 tablespoons extra-virgin olive oil 
  • Kosher salt and freshly cracked black pepper 
  • 2 navel oranges, peeled, peels reserved 
  • 1 mini cucumber
  • 1/4 cup plain Greek yogurt 
  • 2 tablespoons chopped fresh mint
  • 1/2 lemon, zested and juiced (about 1 tablespoon of each) 
  • 1/4 cup roasted pistachios, chopped 
  • 2 tablespoons pomegranate seeds 

Instructions:

  1. Preheat the oven to 200 °C.
  2. Place the beets on a large piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and season generously with salt and pepper. Scatter the orange peels around the beets. Wrap the aluminum foil securely to form a sealed packet.
  3. Place the foil packet on a baking sheet and bake until the beets are tender and the edges of the orange peels start to brown, for about 45 to 50 minutes. Gently open the packet, remove and discard the orange peels. Let the beets cool for about 10 minutes.
  4. While the beets are cooling, prepare the salad ingredients: Cut the peeled oranges into quarter-inch-thick slices. Using a vegetable peeler, create long, thin strips of cucumber lengthwise. Mix the Greek yogurt with mint, lemon zest, and juice in a small bowl to make the dressing. Season with salt and pepper. Set aside.
  5. Once the beets have cooled down a bit, use a paring knife to peel off the skins. Slice the beets into quarter-inch-thick rounds.
  6. To put together the salad, arrange the beet slices on a serving platter in an overlapping pattern. Insert an orange slice between every 2 to 3 beet slices. Spoon the yogurt dressing over the salad. Place the cucumber ribbons elegantly over the top. Drizzle the platter with the remaining 2 tablespoons of olive oil. Sprinkle with pistachios and pomegranate seeds. Serve the salad chilled or at room temperature.
