Glazed salmon with rustic tart cherry salsa
Savor the flavors of succulent glazed salmon paired with a vibrant rustic tart cherry salsa. A perfect balance of sweet and savory in every bite.
Ingredients:
- 1 cup chopped tart cherries, thawed if frozen
- 1/2 cup diced red onion
- 1 jalapeño, chopped
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- salt and pepper, to taste
- 450g salmon fillet, cut into 4 pieces
- 1/4 cup tart cherry juice*
- 1/4 cup honey
- salad greens, for serving
Instructions:
- Combine all the ingredients in a medium bowl, mixing well. Refrigerate until you are ready to serve.
- Heat your oven to 180 °C.
- Prepare a baking sheet by lining it with aluminum foil or parchment paper (foil is recommended). Place the salmon on the baking sheet.
- In a tiny bowl, blend the cherry juice and honey together. Coat the salmon fillets with half of the mixture, saving the remainder for later.
- Put the baking sheet in the oven and cook until nearly done, which should take around 15-17 minutes. Pour the remaining tart cherry-honey mix on top of the fillets and bake for another 2-3 minutes until the edges turn slightly golden.
- Present the salmon fillets over a bed of greens and top them with the tart cherry salsa.
