Glazed salmon with rustic tart cherry salsa

Savor the flavors of succulent glazed salmon paired with a vibrant rustic tart cherry salsa. A perfect balance of sweet and savory in every bite.

Ingredients:

  • 1 cup chopped tart cherries, thawed if frozen
  • 1/2 cup diced red onion
  • 1 jalapeño, chopped
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • salt and pepper, to taste
  • 450g salmon fillet, cut into 4 pieces
  • 1/4 cup tart cherry juice*
  • 1/4 cup honey
  • salad greens, for serving

Instructions:

  1. Combine all the ingredients in a medium bowl, mixing well. Refrigerate until you are ready to serve.
  2. Heat your oven to 180 °C.
  3. Prepare a baking sheet by lining it with aluminum foil or parchment paper (foil is recommended). Place the salmon on the baking sheet.
  4. In a tiny bowl, blend the cherry juice and honey together. Coat the salmon fillets with half of the mixture, saving the remainder for later.
  5. Put the baking sheet in the oven and cook until nearly done, which should take around 15-17 minutes. Pour the remaining tart cherry-honey mix on top of the fillets and bake for another 2-3 minutes until the edges turn slightly golden.
  6. Present the salmon fillets over a bed of greens and top them with the tart cherry salsa.
