Gingery shrimp salad bites
Delight in the zesty flavors of gingery shrimp salad bites; a tantalizing blend of fresh ingredients that bring a burst of taste in every bite.
Ingredients:
- 2 teaspoons dark sesame oil, divided
- 230g peeled and deveined medium shrimp
- 2 teaspoons minced peeled ginger
- ⅛ teaspoon kosher salt
- 2 tablespoons canola mayonnaise
- 1 teaspoon Sriracha
- 32 (1 1/2-inch) chive pieces (optional)
Instructions:
- Preheat a frying pan on medium-high heat. Pour in 1 1/2 teaspoons of oil and move the pan around to spread the oil. Put in the shrimp and cook them by stirring in the pan for 2 minutes. Add ginger and salt, then cook for another 2 minutes or until the shrimp are fully cooked. Let it cool down a bit. Roughly chop the shrimp into smaller pieces.
- In a bowl, mix together mayonnaise, Sriracha, and the remaining 1/2 teaspoon of oil. Add the cooked shrimp and mix well to coat them with the sauce. Put around 1 tablespoon of the shrimp mixture into each of the 16 Chinese soup spoons. Optionally, garnish each spoon with 2 pieces of chives.
