Ginger salad

Ingredients:

  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon fresh ginger, peeled and chopped
  • 3/4 cup canola oil
  • Kosher salt
  • 1/8 teaspoon fresh ground black pepper
  • 1/2 head iceberg lettuce, shredded
  • 2 tablespoons chopped fresh parsley leaves
  • Lemon slices, for garnish

Instructions:

  1. Blend mustard, lemon juice, vinegar, and ginger on high speed in a blender until well combined. Reduce the speed and gradually drizzle in the oil. Season with salt and pepper as desired.
  2. Arrange a mound of shredded lettuce in the middle of a bowl. Drizzle dressing over the lettuce and mix gently. Scatter parsley along the edges of the bowl and decorate with a lemon slice.
