Ginger, carrot, & daikon radish salad

Delight in the vibrant flavors of ginger, crunchy carrot, and zesty daikon radish with this refreshing and nutritious salad. Perfect for a light and tasty meal!

Ingredients:

  • 1 medium size daikon radish
  • 2 carrots
  • 1 tablespoon canola oil
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon sriracha
  • 1 clove garlic
  • 1 tablespoon grated fresh ginger
  • toasted sesame oil

Instructions:

  1. Prepare the vegetables by shredding the daikon and carrots using a julienne peeler or a box grater until you have a total of 4 cups (any remaining daikon can be saved for later). Combine the ginger, garlic, and shredded vegetables in a medium mixing bowl. In a separate bowl, mix together the oil, vinegar, and chili sauce, then pour it over the salad and toss everything together. Sprinkle toasted sesame seeds on top before serving.
