Ginger, carrot, & daikon radish salad

Ingredients:
- 1 medium size daikon radish
- 2 carrots
- 1 tablespoon canola oil
- 2 tablespoons rice vinegar
- 1/2 teaspoon sriracha
- 1 clove garlic
- 1 tablespoon grated fresh ginger
- toasted sesame oil
Instructions:
- Prepare the vegetables by shredding the daikon and carrots using a julienne peeler or a box grater until you have a total of 4 cups (any remaining daikon can be saved for later). Combine the ginger, garlic, and shredded vegetables in a medium mixing bowl.
