Giant couscous & tomato salad with zhoug-style dressing
Delight in the bold flavors of giant couscous and ripe tomatoes, drizzled with zhoug-style dressing. This vibrant salad is an explosion of taste!
Ingredients:
- 4 large vine tomatoes, diced
- ½ red onion, finely chopped
- 150g giant couscous or fregola
- ½ small bunch of coriander, roughly chopped
- handful of parsley leaves, roughly chopped
- 1 lemon, juiced
- 2 green chillies, chopped
- 1 garlic clove, roughly chopped
- ½ tsp ground cumin
- ½ tsp caster sugar
- 3 tbsp olive oil
Instructions:
- Combine diced tomatoes and chopped onion in a spacious bowl along with half a teaspoon of sea salt. Mix well and allow it to rest.Boil the couscous in a pot of salted boiling water for 8-10 minutes until it's soft enough (make sure not to overcook it - aim for slightly undercooked so it can absorb the flavors from the tomato). Then, drain it thoroughly. Let it cool for 10 minutes before mixing it with the tomato and onion mixture.Mix all the ingredients for the dressing with one tablespoon of water and half a teaspoon of sea salt until you get a smooth texture. Drizzle a portion over the couscous and serve the remaining dressing on the side for individuals to add as desired.
