German-style purple potato salad

Ingredients:
- 910g purple potatoes, cut into 1-inch pieces
- 2 tablespoons canola oil or avocado oil
- ½ teaspoon salt, divided
- ¼ teaspoon ground pepper, plus more to taste
- 4 slices bacon, chopped
- ½ cup finely chopped red onion
- ¼ cup cider vinegar
- 2 tablespoons whole-grain mustard
- 1 cup sliced celery
Instructions:
- Heat the oven to 220 °C.
- Mix potatoes with oil, 1/4 teaspoon of salt, and pepper in a large bowl. Put them on a large rimmed baking sheet. Bake, stirring once, until they are soft and golden, which usually takes around 20 to 25 minutes.
- While the potatoes are baking, heat bacon in a medium skillet over medium heat until it becomes crispy, which should take about 5 to 7 minutes. Use a slotted spoon to remove the bacon and place it on a paper-towel-lined plate. In the same skillet, add onion, vinegar, and mustard. Cook while stirring constantly and scraping the browned bits from the pan for about 1 minute. Then, remove the skillet from the heat.
- Put the baked potatoes in a large bowl and pour the dressing over them; mix well. Add celery and the crispy bacon, then mix until everything is coated. Season with the remaining 1/4 teaspoon of salt and more pepper to taste.
