German roasted potato salad

Ingredients:

  • 1360g red potatoes, scrubbed, cut into 2-inch chunks
  • 3 tablespoons extra-virgin olive oil
  • Sea salt, to season
  • Freshly ground black pepper, to season
  • 8 pieces uncooked bacon
  • 1 medium onion, finely chopped
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon granulated sugar
  • 1 tablespoon whole-grain German mustard
  • 1/4 cup chopped parsley

Instructions:

  1. Preheat the oven to 425°F (220°C) and position the rack in the center. Cover a baking sheet with aluminum foil and lightly coat it with nonstick cooking spray. Mix the potatoes with oil, salt, and pepper. Spread out the potatoes in a single layer on the baking sheet. Ensure there is some space between each potato to prevent steaming - you can use two baking sheets if needed.
  2. Position the baking sheet in the middle of the oven. Roast the potatoes until they are golden and creamy inside, which should take around 25 to 35 minutes. Transfer them to a large bowl and keep aside.
  3. While the potatoes are baking, fry the bacon in a large skillet over medium heat until it turns crispy. Put the bacon on a paper towel-lined plate to drain, then crumble it. Keep only a quarter cup of bacon fat in the skillet.
  4. Put the skillet with the bacon fat back on medium heat and add the onion. Sauté until the onion is soft and starts to brown.
  5. Mix in the vinegar, water, and sugar into the skillet. Increase the heat to high and let it boil until the liquid reduces to about three-quarters of a cup, approximately 5 minutes. Remove the skillet from the heat.
  6. Whisk in the mustard. Pour this mixture over the warm potatoes. Sprinkle the crumbled bacon on top and add chopped parsley for garnish. Taste and adjust the seasoning. Serve either warm or at room temperature.
