German potato salad

Ingredients:
- 910g white new potatoes, cut in half
- Kosher salt
- Extra-virgin olive oil
- 8 bacon slices, cut into lardons
- 1 onion, cut into 1/4-inch dice
- 1/2 cup chicken stock
- 1/4 cup apple cider vinegar
- 1 bunch fresh chives, finely chopped
Instructions:
- Place the potatoes in a medium saucepan, add enough water to cover them, and season with a generous amount of salt. Bring the saucepan to a boil, then reduce the heat and simmer until the potatoes are easily pierced with a fork, which usually takes around 20 minutes. Drain the potatoes and set aside.
- Add a small amount of olive oil to a large saute pan with straight sides. Put in the bacon and cook over medium heat until it turns crispy and brown. Next, add the onions and saute until they become tender and fragrant, which usually takes about 7 to 8 minutes. Pour in the stock and vinegar. Gently mix in the warm potatoes and cook until they absorb the liquid. Taste the dish and season with additional salt if necessary. Sprinkle in the chives and serve the dish warm or at room temperature.
