German potato salad

Ingredients:
- 2 large egg yolks
- 2 tablespoons fresh lemon juice

- 2 1/2-ounce strips slab bacon
- 450g red bliss potatoes

Instructions:
- Prepare the mayonnaise: Beat the egg yolks, lemon juice, and 1 teaspoon of salt in a bowl until they become frothy. Gradually pour the vegetable oil in a thin stream, while whisking continuously until the mixture is fully combined.
- Prepare the potato salad: Saute the bacon in a pan until it becomes crispy. Place on a paper towel to cool, then finely chop.
- Cut the potatoes into slices that are 1/4 inch thick; place them in a pot, cover with water, and lightly sprinkle with salt. Bring to a gentle boil over medium heat and simmer until they are just tender when pierced with a fork, about 8 to 10 minutes. Drain thoroughly.
