German potato salad

Ingredients:

  • 2 large egg yolks
  • 2 tablespoons fresh lemon juice

  • 3/4 cup vegetable oil
  • 2 1/2-ounce strips slab bacon
  • 450g red bliss potatoes

  • 2 tablespoons capers, chopped
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons minced fresh chives
  • Freshly ground pepper

Instructions:

  1. Prepare the mayonnaise: Beat the egg yolks, lemon juice, and 1 teaspoon of salt in a bowl until they become frothy. Gradually pour the vegetable oil in a thin stream, while whisking continuously until the mixture is fully combined.
  2. Prepare the potato salad: Saute the bacon in a pan until it becomes crispy. Place on a paper towel to cool, then finely chop.
  3. Cut the potatoes into slices that are 1/4 inch thick; place them in a pot, cover with water, and lightly sprinkle with salt. Bring to a gentle boil over medium heat and simmer until they are just tender when pierced with a fork, about 8 to 10 minutes. Drain thoroughly.
  4. Mix the bacon, capers, vinegar, and chives in a large bowl. Stir in 1/4 cup of mayonnaise (keep the remaining for another dish). Carefully combine the warm potatoes and season with salt and pepper.
