German potato salad

Ingredients:
- 910g Yukon gold potatoes, sliced 1/2-inch thick
- 110g bacon, chopped
- Kosher Salt
- 1 yellow onion, chopped
- 1 cup low-sodium chicken stock
- 1/4 cup white wine vinegar
- 2 tablespoon grainy mustard
- 1 bunch chives, chopped
Instructions:
- Put the potato slices in a pot and cover them with water. Bring the water to a boil over high heat, then lower the heat and simmer until the potatoes can be easily pierced with a fork, approximately 8 to 10 minutes. Once done, drain the potatoes and let them cool slightly before transferring them to a large bowl.
- While the potatoes are boiling, cook the bacon with a pinch of salt in a large saute pan over medium-low heat until it becomes crispy, which should take around 8 to 10 minutes. Once done, remove the bacon using a slotted spoon and add it to the bowl with the potatoes. In the same pan, cook the onions with a pinch of salt until they are soft and translucent, for about 5 minutes. Then, add the chicken stock, vinegar, mustard, and chives to the pan and bring the mixture to a boil. Finally, pour this dressing over the potatoes and mix well to coat them.
