Georgian herbed kidney beans salad (lobio mtsvanilit)

Ingredients:
- • 1 (15oz) can organic dark kidney + 1 (15oz) can organic Cannellini beans, well rinsed and thoroughly drained
- • 1/4 cup of Extra Virgin olive oil
- • 1/4 cup of Sherry vinegar
- • 2-3 teaspoons honey or Agave nectar
- • 2 garlic cloves, finely minced
- • 1 teaspoon of coriander seeds, finely crushed
- • 2 cups (yes 2 cups) of mixed chopped fresh herbs (cilantro, parsley, basil, dill and tarragon)
- • Kosher or sea coarse salt and freshly ground black pepper, to taste
Instructions:
- Mix the beans in a big bowl. In a tiny bowl, blend together vinegar, oil, and honey until well combined; stir in garlic and coriander seeds; drizzle over the beans. Season with salt and pepper according to your preference; add the chopped herbs. Stir well and serve either at room temperature or chilled.
