Garth's pasta salad

Ingredients:

  • 340g rotini pasta
  • 340g fresh spinach and cheese tortellini 
  • 2 dozen grape tomatoes, halved
  • 1 teaspoon kosher salt 
  • 1/2 teaspoon freshly ground black pepper 
  • 280g Cheddar, shredded 
  • 3 tablespoons olive oil 

Instructions:

  1. Bring a large saucepan of water to a boil. Cook the rotini until it reaches your preferred level of doneness, which should take around 10 minutes. Add the tortellini during the last 6 minutes of cooking. Once done, drain the pasta and transfer it to a spacious bowl.
  2. Mix the tomatoes with salt and pepper in a tiny bowl.
  3. While the pasta is still hot, combine it with the tomatoes, Cheddar, and oil. Toss everything together and serve the dish while it's still warm.
