Garlic salad pizza

Ingredients:

  • 1 whole wheat pizza crust
  • 1 cup arugula greens
  • 1 cup mixed salad greens
  • 2 tomatoes, chopped
  • cornmeal for dusting
  • 2 tablespoon low-fat grated parmesan cheese
  • 3 tablespoon olive oil
  • 3 cloves garlic, chopped
  • 1 medium onion, chopped
  • 1/4 cup shredded cheese (part-skim mozzarella, veggie, or soy)
  • 1/2 cucumber, sliced thinly
  • 1/4 cup chopped fresh basil
  • 3 tablespoon balsamic vinegar
  • salt, to taste
  • pepper, to taste

Instructions:

  1. Preheat your oven to 200 °C. Warm up 1 tablespoon of olive oil with onion in a small pan over medium heat. Cook until the onion becomes see-through. Add the garlic and set it aside to cool down.
  2. Sprinkle a little cornmeal onto a pizza peel. Transfer the flattened pizza dough onto the peel, or if using a cooling rack, ensure it's at least the same size as the dough. Gently slide the dough directly onto the oven rack in the center of the preheated oven, or position the cooling rack in the oven's center. Bake until the dough sets slightly, about 3 minutes. This will make it easier to slide the pizza off the peel or cooling rack after adding the toppings.
  3. Once the dough is slightly set, carefully take it out of the oven using the peel or by lifting the cooling rack. Keep the oven on. Brush the dough with the remaining olive oil and evenly spread the garlic/onion mixture over the dough, leaving a ½-inch border. Sprinkle with the two types of cheese.
  4. Put the pizza back in the oven. Continue baking until the crust is crispy and the cheese has melted, around 7-10 more minutes. Check on it occasionally. While the pizza is baking, in a medium bowl, mix together greens, tomatoes, cucumber, and basil. Season with olive oil, vinegar, salt, and pepper as per your taste.
  5. Take the pizza out of the oven and add the salad on top. Slice it using a pizza cutter or a large knife.
