Garden salad

Ingredients:

  • 2 eggs, hard-boiled
  • 2 tablespoons cold water
  • 2 tablespoons oil
  • Salt to taste
  • 1 teaspoon powdered sugar
  • 1 teaspoon mustard
  • 2 teaspoons white vinegar
  • 2 teaspoons tarragon vinegar
  • 450g mixed greens (lettuce, chervil, watercress, etc.)
  • 1 cup scallions, sliced on the diagonal

Instructions:

  1. Cut the hard-boiled eggs into halves horizontally. Divide the whites and yolks. Cut the whites into circular shapes and keep aside.
  2. In a mixing bowl, blend the yolks with chilled water until smooth. Stir in the oil, salt, sugar, and mustard until evenly mixed. Pour in the vinegars.
  3. Mix the salad greens with the prepared sauce. Move it to a serving dish. Arrange sliced scallions along the edges and garnish with the egg white circles.
