Garden herb salad with crab and harissa vinaigrette

Ingredients:

  • 1/4 cup harissa (see Note)
  • 2/3 cup fresh lemon juice
  • 1/2 cup extra-virgin olive oil
  • Salt
  • Freshly ground pepper
  • 1810g carrots, julienned on a mandoline or coarsely shredded in a food processor (about 12 cups)
  • 2 cups raisins
  • 4 cups flat-leaf parsley leaves
  • 450g feta, crumbled

Instructions:

  1. Combine the harissa and lemon juice in a big bowl. Slowly mix in the olive oil and add salt and pepper to taste.
  2. Mix in the carrots, raisins, parsley, and feta with the dressing and mix thoroughly. Serve slightly cold or at ambient temperature.
