Garden herb couscous salad with green onions

Ingredients:

  • 2.5 cups water
  • 1/3 cup good quality extra virgin olive oil
  • 1 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 green onions, finely chopped (both white and green parts)
  • 5 basil leaves, finely chopped
  • 2 tablespoons parsley, finely chopped
  • 1 cup grape tomatoes, sliced in half or thirds
  • 1/2 cup pitted kalamata olives, sliced in half
  • 3/4 cup crumbled goat cheese

Instructions:

  1. In a medium saucepan, combine water, 1 tablespoon of olive oil, and couscous. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for approximately 10 minutes, stirring occasionally. Drain the couscous, rinse it under cold water to halt the cooking, and avoid clumping. Drain thoroughly.
