Fruit salad with limoncello

Delight in a refreshing fruit salad infused with the vibrant citrus flavors of limoncello. Perfect for a sunny day or as a zesty dessert.

Ingredients:

  • 1/3 cup good bottled lemon curd
  • 1 tablespoon honey
  • 1/4 teaspoon pure vanilla extract
  • 2 cups sliced strawberries (1 pint)
  • 1 cup raspberries (1/2 pint)
  • 1 cup blueberries (1/2 pint)
  • 2 tablespoons sugar
  • 3 tablespoons limoncello liqueur
  • 1 banana, sliced
  • Fresh mint springs

Instructions:

  1. To prepare the lemon yogurt topping, combine the yogurt, lemon curd, honey, and vanilla by whisking them together. Leave the mixture at room temperature.
  2. To make the fruit salad, delicately mix the strawberries, raspberries, blueberries, sugar, and limoncello. Let them sit at room temperature for approximately 5 minutes to allow the berries to soak up the sugar and liqueur. Carefully incorporate the banana into the blend.
  3. Present dishes of fruit with a spoonful of lemon yogurt on top. Garnish each serving with a fresh mint sprig.
