Frozen iceberg salad

Ingredients:

  • 1 large head iceberg lettuce, outer layer removed, end trimmed
  • 2 tablespoons dijon mustard
  • 2 tablespoons champagne vinegar
  • Kosher salt
  • 1/2 cup extra-virgin olive oil
  • 3 tablespoons chopped fresh tarragon

Instructions:

  1. Lay the lettuce head on a even surface and slice it into two halves. Proceed to cut each half into 2 triangle-shaped pieces. Move the lettuce onto a small plate and place it in the freezer until shortly before you plan to serve it. (If needed, it can be kept there for a maximum of 2 hours.)
  2. Combine the mustard, vinegar, and a bit of salt in a medium bowl. Gradually mix in the olive oil and incorporate the tarragon. Check the seasoning by tasting the mixture.
  3. Once you are prepared to serve, shift the lettuce onto a serving dish and drizzle it with the prepared dressing. Serve promptly.
