Fromage blanc custards with radish salad

Indulge in creamy Fromage blanc custards paired with a vibrant radish salad. This refreshing dish offers a perfect balance of flavors and textures.

Ingredients:

  • 4 cups whole milk
  • 1 (2-inch) strip of lemon zest
  • 1 cinnamon stick
  • 1/4 teaspoon kosher salt
  • 1 1/4 cups granulated sugar
  • 8 large egg yolks
  • 1/4 cup cornstarch, dissolved in 1/4 cup water
  • 1 teaspoon pure vanilla extract
  • Ground cinnamon, for garnish

Instructions:

  1. Mix together milk, lemon peel, cinnamon stick, and salt in a large pot. Heat until it starts to simmer on medium heat, stirring occasionally. Once simmering, take it off the heat.
  2. In the meantime, in a large bowl that can handle heat, use an electric mixer to blend sugar with egg yolks until light in color, for about 4 minutes. Add cornstarch mixture and blend. Then, with the mixer on low, slowly mix in half of the warm milk.
  3. Return egg and milk mix back into the pot with the rest of the warm milk. Cook the custard on medium-low heat, stirring continuously for 10 to 12 minutes until it thickens. Mix in vanilla extract.
  4. Pour the custard through a strainer into a bowl, removing the cinnamon stick and lemon zest. Cover the custard's surface with plastic wrap and refrigerate for at least 8 hours. Divide the custard into 6 bowls, dust with cinnamon, and serve.
