Fromage blanc custards with radish salad

Ingredients:
- 4 cups whole milk
- 1 (2-inch) strip of lemon zest
- 1 cinnamon stick
- 1/4 teaspoon kosher salt
- 1 1/4 cups granulated sugar
- 8 large egg yolks
- 1/4 cup cornstarch, dissolved in 1/4 cup water
- 1 teaspoon pure vanilla extract
- Ground cinnamon, for garnish
Instructions:
- Mix together milk, lemon peel, cinnamon stick, and salt in a large pot. Heat until it starts to simmer on medium heat, stirring occasionally. Once simmering, take it off the heat.
- In the meantime, in a large bowl that can handle heat, use an electric mixer to blend sugar with egg yolks until light in color, for about 4 minutes. Add cornstarch mixture and blend. Then, with the mixer on low, slowly mix in half of the warm milk.
- Return egg and milk mix back into the pot with the rest of the warm milk. Cook the custard on medium-low heat, stirring continuously for 10 to 12 minutes until it thickens. Mix in vanilla extract.
- Pour the custard through a strainer into a bowl, removing the cinnamon stick and lemon zest. Cover the custard's surface with plastic wrap and refrigerate for at least 8 hours. Divide the custard into 6 bowls, dust with cinnamon, and serve.
