Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- Salt and freshly ground pepper
- 2 thick-cut bacon slices, cut crosswise into 1/2 -inch strips
- 1 small shallot, finely chopped
- 110g frisée, torn into small pieces
Instructions:
- Combine the oil, vinegar, salt, and pepper in a bowl.
- In a big pan, fry the bacon over medium to high heat until it turns brown and crispy, which should take around 5 minutes. Add the shallot and cook it by continuously stirring until it becomes soft, this usually takes 1 to 2 minutes. Remove most of the fat from the pan, leaving only about one tablespoon, then mix in the prepared vinaigrette, scraping off any brown bits stuck to the pan. Transfer the warm sauce to a spacious bowl, put in the frisée, and mix thoroughly. Serve right away.
