Frisee salad
Indulge in the delightful flavors of frisee salad, a refreshing mix of bitter greens, tangy vinaigrette, and crisp toppings for a culinary journey of taste.
Ingredients:
- 110g blue cheese, such as Cabrales, Saga, Roquefort, or Gorgonzola dolce
- 6-inch piece baguette
- 3 tablespoons champagne vinegar
- 2 tablespoons chopped shallot
- 1 tablespoon sugar
- 1 large egg
- Kosher salt and freshly ground black pepper
- 110g pancetta or thick-cut bacon, cut into 3/4 by 1/4-inch pieces
- 280g frisee (French curly endive), torn into bite-sized pieces (about 10 cups)
- 3 radishes, thinly sliced
- Candied pecans, for garnish
Instructions:
- Place the oven rack on the highest level and preheat the broiler. Slice the cheese into 1/4-inch thick pieces. Cut 12 long 1/2-inch diagonal slices from the baguette, then place the cheese slices on top. Place them on a baking sheet and set aside. .
- Combine the vinegar, shallot, sugar, egg, 3/4 teaspoon salt and 1/2 teaspoon pepper in a small bowl, whisking well.
- In a medium skillet, heat over medium heat and cook the pancetta, stirring occasionally, until golden for approximately 6 minutes. Transfer to a plate lined with paper towels. Keep the drippings in the skillet, lower the heat to low.
- Pour the vinegar mixture into the skillet with the drippings, whisking constantly, until slightly thickened for about 1 to 2 minutes. Remove from the heat.
- In a large bowl, place the frisee and pour the warm dressing over it, tossing to coat well. Season with salt and pepper.
- Broil the bread until the cheese becomes soft, for about 1 minute. Serve the salad on plates, then add radishes, pecans, and pancetta on top. Place 3 blue cheese crostini on each salad.
