Frisée and endive salad

Ingredients:
- 1 head of frisée (170g), coarsely chopped
- 2 endives, thinly sliced crosswise
- 1 tomato, cut into 12 wedges
- 1/2 seedless cucumber, halved lengthwise and thinly sliced crosswise
- 1/2 cup blue cheese dressing
- 60g mild blue cheese, such as Maytag blue (1/4 cup), crumbled
- 1/3 cup mayonnaise
- 1 tablespoon extra virgin olive oil
- 1 tablespoon water
- 2 teaspoons red wine vinegar
- 3 tablespoons tarragon, coarsely chopped
- Kosher salt
- Freshly ground black pepper
Instructions:
- Using a food processor, blend half of the blue cheese together with the mayonnaise, olive oil, water, and vinegar until it forms a smooth mixture. Then, mix in the rest of the blue cheese and tarragon until just combined, leaving the dressing slightly chunky. Season with salt and pepper.
- Combine frisée, endives, tomato, and cucumber in a large bowl. Pour the dressing over the salad, toss everything together, and then it's ready to be served.
