Frisée and endive salad

Delight in the crisp textures and bitter notes of frisée and endive in this refreshing salad perfect for any mealtime.

Ingredients:

  • 1 head of frisée (170g), coarsely chopped
  • 2 endives, thinly sliced crosswise
  • 1 tomato, cut into 12 wedges
  • 1/2 seedless cucumber, halved lengthwise and thinly sliced crosswise
  • 1/2 cup blue cheese dressing
  • 60g mild blue cheese, such as Maytag blue (1/4 cup), crumbled
  • 1/3 cup mayonnaise
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • 2 teaspoons red wine vinegar
  • 3 tablespoons tarragon, coarsely chopped
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. Using a food processor, blend half of the blue cheese together with the mayonnaise, olive oil, water, and vinegar until it forms a smooth mixture. Then, mix in the rest of the blue cheese and tarragon until just combined, leaving the dressing slightly chunky. Season with salt and pepper.
  2. Combine frisée, endives, tomato, and cucumber in a large bowl. Pour the dressing over the salad, toss everything together, and then it's ready to be served.
