Fried potato salad

Ingredients:
- Peanut oil, for frying
- 910g russet potatoes, cut into 1/2-inch cubes
- Salt and freshly ground black pepper
- 2 tablespoons Dijon mustard
- 1/3 cup mayonnaise
- 2 tablespoons chopped fresh dill
- 3 tablespoons capers
- 1/2 red onion, finely chopped
- 2 stalks celery, finely diced
Instructions:
- Heat an adequate amount of oil in a deep-fryer or a pot with a thick bottom, so it reaches halfway up the pot, until it reaches 180 °C.
- Place the potatoes into the hot oil and fry them until they turn golden and crispy, which usually takes about 5 minutes. Take them out of the fryer and let them drain on a sheet tray lined with paper towels. Sprinkle salt and pepper over them, according to your taste.
- While the potatoes are frying, combine mustard, mayonnaise, dill, and capers in a small bowl.
- Transfer the fried potatoes to a large bowl. Add the red onion and celery, and then carefully mix in the mayonnaise dressing. Add more salt and pepper if necessary, and dish up.
