Fresh summer salad with raspberry lambic dressing

Elevate your taste buds with this refreshing summer salad drizzled with a delectable raspberry lambic dressing. A burst of flavors in every bite!

Ingredients:

  • 280g bag Trader Joe’s Organic Power Greens
  • 1 1/2 cups fresh raspberries
  • 140g package of chèvre goat cheese
  • 1/4 cup French’s Caramelized Crispy Fried Onions, crushed
  • 140g package of Trader Joe’s Candied Walnuts
  • 1 medium red onion, sliced thin
  • 4 teaspoons Chia seed
  • 1/4 cup Raspberry Lambic Beer
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon shallots, chopped fine
  • 2 tablespoons Trader Joe’s Aioli Garlic Mustard Sauce
  • 4 tablespoons red wine vinegar
  • salt and pepper to taste

Instructions:

  1. For preparing the dressing, blend together lambic beer, 1/2 cup of raspberries, olive oil, shallots, aioli, vinegar, salt, and pepper in a blender until well combined. Put it aside.
  2. For making the goat cheese balls, portion the goat cheese into 16 equal parts and shape them into small balls. Place crushed fried onions on a plate and coat the goat cheese balls evenly by rolling them over the onions. Set aside.
  3. To put the salad together, combine greens, 1 cup of raspberries, goat cheese balls, walnuts, and red onions in a large salad bowl. Drizzle with the prepared dressing and sprinkle chia seeds on top. Mix well and serve immediately.
