Fresh summer salad with raspberry lambic dressing
Elevate your taste buds with this refreshing summer salad drizzled with a delectable raspberry lambic dressing. A burst of flavors in every bite!
Ingredients:
- 280g bag Trader Joe’s Organic Power Greens
- 1 1/2 cups fresh raspberries
- 140g package of chèvre goat cheese
- 1/4 cup French’s Caramelized Crispy Fried Onions, crushed
- 140g package of Trader Joe’s Candied Walnuts
- 1 medium red onion, sliced thin
- 4 teaspoons Chia seed
- 1/4 cup Raspberry Lambic Beer
- 1/2 cup extra virgin olive oil
- 1 tablespoon shallots, chopped fine
- 2 tablespoons Trader Joe’s Aioli Garlic Mustard Sauce
- 4 tablespoons red wine vinegar
- salt and pepper to taste
Instructions:
- For preparing the dressing, blend together lambic beer, 1/2 cup of raspberries, olive oil, shallots, aioli, vinegar, salt, and pepper in a blender until well combined. Put it aside.
- For making the goat cheese balls, portion the goat cheese into 16 equal parts and shape them into small balls. Place crushed fried onions on a plate and coat the goat cheese balls evenly by rolling them over the onions. Set aside.
- To put the salad together, combine greens, 1 cup of raspberries, goat cheese balls, walnuts, and red onions in a large salad bowl. Drizzle with the prepared dressing and sprinkle chia seeds on top. Mix well and serve immediately.
