Fresh peas and asparagus salad

Ingredients:
- 2 cups Fresh peas
- 1 bunch Fresh asparagus
- 2 Lemons
- 2 Garlic cloves (crushed)
- 1 cup Fresh mint leaves
- 110g Goat cheese
- Handful of fresh thyme flowers (Optional)
- Salt + pepper
- Olive Oil
Instructions:
- In a medium saucepan, bring salted water to a boil. Once boiling, switch off the heat and carefully add the fresh peas and asparagus. Let them blanch for about 4 minutes.After blanching, remove the peas and asparagus from the water and transfer them to an ice bath to halt the cooking process and preserve their vibrant green hue.Ensure that the peas and asparagus are thoroughly drained from the ice bath. Gently dry them with a paper towel before placing them in a large mixing bowl. Grate the zest of one lemon and squeeze the juice from both, then add them to the bowl along with the minced garlic and torn mint leaves. Season with salt, pepper, and olive oil according to your preference, and mix well to combine.Evenly distribute the salad onto 4 plates, then garnish with pieces of goat cheese and a sprinkle of thyme flowers if desired.
