Fresh pea and salami bruschetta

Ingredients:
- 4 tablespoons olive oil, divided
- 110g saucisson sec, thinly sliced, or sliced salami
- 2 cups fresh peas or thawed frozen peas
- 1/2 teaspoon finely grated lemon zest
- 4 slices bread from a country loaf
- Salad, for serving
Instructions:
- Heat up the broiler with the rack positioned at the top. Coat both sides of the bread with 2 tablespoons of oil and place them on a baking sheet that is safe for broiling.
- In a skillet, mix the remaining oil, cured meat, peas, lemon zest, and 1/2 cup of water. Heat the mixture on medium heat. Cover and cook until the peas and sausage are soft, approximately 5 minutes. Add salt and pepper to taste.
- While the peas are cooking, broil the toasts, flipping them over once, until they are golden brown, for about 1 to 2 minutes per side. Spread the pea mixture over the toasts before serving and pair with a salad.
