Fresh pea and salami bruschetta

Delight your taste buds with this vibrant salad recipe combining fresh peas and savory salami on top of crispy and golden bruschetta.

Ingredients:

  • 4 tablespoons olive oil, divided
  • 110g saucisson sec, thinly sliced, or sliced salami
  • 2 cups fresh peas or thawed frozen peas
  • 1/2 teaspoon finely grated lemon zest
  • 4 slices bread from a country loaf
  • Salad, for serving

Instructions:

  1. Heat up the broiler with the rack positioned at the top. Coat both sides of the bread with 2 tablespoons of oil and place them on a baking sheet that is safe for broiling.
  2. In a skillet, mix the remaining oil, cured meat, peas, lemon zest, and 1/2 cup of water. Heat the mixture on medium heat. Cover and cook until the peas and sausage are soft, approximately 5 minutes. Add salt and pepper to taste.
  3. While the peas are cooking, broil the toasts, flipping them over once, until they are golden brown, for about 1 to 2 minutes per side. Spread the pea mixture over the toasts before serving and pair with a salad.
