Fresh herb & snap pea salad

Ingredients:
- 2 tablespoons canola oil
- 2 tablespoons sesame oil
- 3 tablespoons minced garlic
- 450g pea shoots or sprouts
- ¼ cup Shaoxing rice wine (see Tip)
- ¾ teaspoon salt
- ¼ teaspoon ground white pepper
Instructions:
- In a spacious flat-bottomed wok or large pot, warm up a mixture of canola oil and sesame oil over medium-high heat. Put in the minced garlic and stir continuously until it becomes tender and releases a pleasant aroma, which usually takes around half a minute. Next, introduce pea shoots (or sprouts), rice wine, salt and white pepper into the wok or pot; continue to cook until the greens shrink and become extremely tender, lasting between 1 to 3 minutes.
