Fresh herb & snap pea salad

Ingredients:

  • 2 tablespoons canola oil
  • 2 tablespoons sesame oil
  • 3 tablespoons minced garlic
  • 450g pea shoots or sprouts
  • ¼ cup Shaoxing rice wine (see Tip)
  • ¾ teaspoon salt
  • ¼ teaspoon ground white pepper

Instructions:

  1. In a spacious flat-bottomed wok or large pot, warm up a mixture of canola oil and sesame oil over medium-high heat. Put in the minced garlic and stir continuously until it becomes tender and releases a pleasant aroma, which usually takes around half a minute. Next, introduce pea shoots (or sprouts), rice wine, salt and white pepper into the wok or pot; continue to cook until the greens shrink and become extremely tender, lasting between 1 to 3 minutes.
