Ingredients:
- 2 Fresh Corns
- 100g French beans
- 8–10 Cherry tomatoes
- 1/2 Red apple,
- 1–2 tbsp Lemon juice or to your taste
- some mayonnaise (optional)
Instructions:
- Peel off the husks and silk from the fresh corns. Rinse them and place in a pot of boiling water (ensure the water covers the corns).
- Cover the pot and bring the water back to a boil. Let the corns cook for approximately 8-10 minutes or until they are tender.
- While the corns are boiling, clean the French beans, trim the ends, remove the string, and keep them aside.
- Once the corns are done, add half a teaspoon of salt to the water and continue boiling for an extra 2 minutes. Then, drain and let it cool. Use a sharp knife to remove the corn from the cob. (you can refer to a tutorial for help in shucking the corn)
- Add the French beans into the same pot of boiling water and blanch for 3-5 minutes. Transfer the French beans into a bowl of ice water for a minute, then drain well.
- Afterwards, finely chop the French beans and quarter the cherry tomatoes.
- Put together the corns, French beans, and cherry tomatoes in a serving bowl. Mix thoroughly, cover, and refrigerate for 1-2 hours.
- Just before serving, cut the apple in half into wedges. Soak them in water with a pinch of salt or lemon juice to prevent browning for a minute. Slice the apple into small pieces and combine it with the corn mixture.
- Finally, drizzle 1-2 tablespoons of lemon juice over the corn salad (you can add mayonnaise if desired) and toss gently.
