Fresh corn and watermelon salad

Ingredients:

  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 cups fresh corn off the cob, cooked
  • 1 1/2 cups diced watermelon
  • 2/3 cup shelled edamame, cooked in salted water
  • 1/3 cup finely diced cucumber, peeled and seeded
  • 1 tablespoon finely diced red onion
  • 1 heaping tablespoons chopped fresh cilantro
  • salt and cracked pepper to taste

Instructions:

  1. Combine vinegar, honey, and lime juice in a medium bowl. Mix in corn, watermelon, edamame, cucumber, onion, and cilantro. Stir well. Season with salt and pepper according to your preference. Refrigerate for a few hours, stirring from time to time to ensure all the vegetables are evenly coated with the marinade.
