Fresh cabbage salad

Ingredients:

  • 1/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • Kosher salt
  • Fresh ground pepper
  • 1 cup finely shredded green cabbage
  • 1 cup finely shredded red cabbage
  • 1/2 cup julienned carrot
  • 1/2 cup julienned red pepper
  • 1/4 cup finely slivered red onion
  • 1 small bunch chives, cut into 2-inch lengths

Instructions:

  1. Combine the vinegar, oil, Dijon mustard, sugar, salt, and pepper in a bowl and mix well. Set aside. 
  2. Lightly mix together the cabbage, carrot, red pepper, red onion, and chives in a separate bowl. 
  3. Pour the vinaigrette over the salad and gently toss until evenly coated.
