Ingredients:
- 910g red potatoes, peeled
- 1/4 cup white wine
- 1/2 cup olive oil
- 3 tablespoons white wine vinegar
- 1 tablespoon fresh tarragon, minced

Instructions:
- Start by boiling a generous amount of water in a big pot, then put in the potatoes. Let them cook until they are soft, then drain the water. While the potatoes are still warm, slice them into pieces about a quarter-inch thick and mix in some wine. For the dressing, blend oil and vinegar together, then toss in the tarragon.
