French omelette with feta and crudité salad

Ingredients:

  • 4 eggs
  • 2 tablespoons chopped parsley
  • 1/4 cup scrambled feta cheese
  • 2 tomatoes
  • 1/2 cucumber
  • 2 handfuls baby spinach
  • 1 avocado
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions:

  1. Dice the tomatoes, cucumber, and finely chop baby spinach. Slice the avocado. Arrange on a plate, season with salt and pepper, drizzle with balsamic vinegar and 1 tablespoon of olive oil.
  2. Whisk the eggs, mix in parsley and feta cheese. Season with salt and pepper. Preheat a pan over high heat. Add 1 tablespoon of olive oil and pour in the egg mixture. Cook for 7 minutes without flipping, simply fold one side over. Serve.
