French omelette with feta and crudité salad

Ingredients:
- 4 eggs
- 2 tablespoons chopped parsley
- 1/4 cup scrambled feta cheese
- 2 tomatoes
- 1/2 cucumber
- 2 handfuls baby spinach
- 1 avocado

- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Instructions:
- Dice the tomatoes, cucumber, and finely chop baby spinach. Slice the avocado. Arrange on a plate, season with salt and pepper, drizzle with balsamic vinegar and 1 tablespoon of olive oil.
