French lentil salad
Delight in the flavors of a French lentil salad, a culinary masterpiece of earthy lentils, vibrant veggies, and zesty dressing. Perfect for a nutritious meal!
Ingredients:
- 3/4 cup green lentils
- 1 bay leaf
- 1 garlic clove, chopped
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 230g firm tofu, frozen and defrosted (see Cook's Note)
- 3 plum tomatoes, seeded and chopped
- 1 small red onion, chopped
- 2/3 cup fresh, canned, or defrosted corn kernels
- 1/2 cup chopped mint
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground black pepper
Instructions:
- In a large pot, mix together lentils, bay leaf, garlic, basil, and thyme. Pour 2 1/2 cups of water and bring to a boil on medium-high heat. Cover the pot, lower the heat, and let it simmer until the lentils are fully cooked, which should take about 30 to 40 minutes. Once done, take the pot off the heat and remove the bay leaf.
- Break the tofu into small 1/2-inch pieces. Gently add them to the cooked lentils. Then, introduce the tomatoes, onion, corn, and mint to the mix. Sprinkle the vinegar, lemon juice, and oil. Stir the ingredients well until they are thoroughly mixed. Season with salt and pepper to your liking.
- Present the dish at room temperature. You can store the salad for a maximum of 2 days by keeping it covered and refrigerated.
