French carrot fennel salad

Ingredients:
- 1/2 fennel bulb + fennel fronds
- 1 tablespoon chopped fresh parsley
- sea salt and pepper
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1 clove garlic, minced
- 6 tablespoons olive oil
- 3-4 large carrots, peeled
Instructions:
- Select a handful of fennel fronds to measure out 1 tablespoon. Combine the fennel fronds, parsley, salt, pepper, lemon juice, minced garlic, and olive oil in a mixing bowl. Keep it aside.
- Grate the carrots using the larger holes of a box grater. Slice the fennel bulb thinly using a mandoline (or alternatively with a sharp chef's knife).
- Mix the grated carrots and thinly sliced fennel bulb with the prepared dressing.
