French bean mimosa salad

Ingredients:
- 2 eggs
- 230g French beans
- 1 cup frozen peas
- ¼ cup walnuts
- 1 tablespoon capers
- 1 shallot
- 1 teaspoon Dijon mustard
- 1 tablespoon white wine vinegar
- 2 tablespoons sunflower oil
- ½ teaspoon dried salad herbs
- 1 tablespoon heavy cream
- 1 tablespoon water
- Coarse sea salt
- Pepper
Instructions:
- Dice the shallot into small pieces and place them in a small bowl. Combine all the other ingredients for the dressing and stir well.
- Cook the eggs in boiling water for 10 minutes, then let them cool down.
- Trim the ends of the French beans and cook them with the frozen peas in boiling salted water for 4 minutes. Afterward, drain and rinse the vegetables with cold water to preserve their vivid green color. Transfer them to a serving plate.
- Peel and finely chop the eggs, walnuts, and capers. Sprinkle them over the salad and drizzle the dressing on top before serving. This salad can be enjoyed either warm or cold.
