Ingredients:

  • 2 eggs
  • 2 tablespoon mayonnaise, or aioli if you have it
  • 1 tablespoon minced chives, plus more for garnish
  • 2 teaspoon pecorino cheese, plus more for garnish
  • 2 slices sourdough bread
  • 1 teaspoon roasted red pepper spread
  • 1/4 tablespoon lettuce
  • salt and freshly cracked black pepper, to taste

Instructions:

  1. Place the eggs in a small saucepan and add enough cold water to cover them by 1 inch. Bring the water to a boil, then remove the saucepan from the heat and let the eggs sit for 7 minutes to cook through. Peel and thinly slice the eggs. In a small bowl, combine mayonnaise, chives, and Pecorino cheese. Season the mixture with salt and pepper according to your preference. Arrange the sliced eggs on one piece of sourdough bread and drizzle with the mayonnaise mixture. Spread red pepper spread, if desired, on the other slice of bread and top with lettuce. Sprinkle chives and Pecorino cheese on each slice. Assemble the sandwich by bringing the slices together or serve them separately.
