Filipino salad crêpes

Ingredients:
- 1 egg (large)
- Fine salt
- 1 cup all-purpose flour
- 1 tablespoon grapeseed oil (plus more for brushing)
- ½ cup smooth peanut butter
- ½ cup unsweetened coconut milk
- 1 tablespoon tamari (or soy sauce)
- 1 garlic clove (finely grated)
- 1 green mango (unripe, peeled and julienned)
- 1 cup carrot (julienned)
- 1 cup daikon (julienned)
- 1 cup English cucumber (julienned)
- ½ cup mint leaves (torn)
- ½ cup cilantro (lightly packed chopped)
- butter lettuce leaves (Small)
- peanuts (roasted, chopped)
- coconut vinegar (for serving)
Instructions:
- Combine the egg, 1/2 teaspoon of salt, and 1 1/2 cups of water in a medium bowl. Gently mix in the flour until a batter forms (it is acceptable if there are lumps). Add the 1 tablespoon of grapeseed oil to the mixture.
- Prepare an 8-inch nonstick skillet by heating it and applying grapeseed oil. Pour 1/4 cup of the batter into the skillet and move the skillet around to spread the batter evenly. Cook over medium heat until bubbles appear around the edges of the crêpe, which should take about 1 minute. Flip the crêpe and continue cooking until the bottom is lightly browned, approximately 45 seconds. Place the crêpe on a baking sheet and cover with wax or parchment paper. Repeat this process with the remaining batter, applying oil to the skillet as necessary. Separate each crêpe with paper to prevent sticking.
- In a small bowl, mix together the peanut butter, coconut milk, tamari, garlic, and 3 tablespoons of water. Season with salt. In another bowl, combine the mango, carrot, daikon, cucumber, mint, and cilantro.
- Place the crêpes on plates. Add a lettuce leaf and some of the salad on top of each crêpe. Drizzle with the peanut dressing. Sprinkle with peanuts and coconut vinegar before serving. You can offer additional vinegar and dressing on the side.
