Fig salad

Ingredients:
- 1 container (15 oz.) ricotta cheese
- 1 cup balsamic vinegar
- 1/2 cup water
- 10-12 quartered figs
- 1 pinch sea salt
- small ounces Mint leaves as garnish
Instructions:
- Allow the ricotta to strain in the fridge overnight using a sieve that is lined with cheesecloth or a coffee filter.
- Transfer the strained ricotta into a food processor and pulse it a few times until it becomes creamy.
- In a saucepan, combine the water and balsamic vinegar. Cook the mixture over low heat until it thickens and becomes syrupy, which should take approximately 20 minutes. Then, add the honey and stir until it dissolves. Take the saucepan off the heat and let it cool down.
- For the final dish, plate the ricotta by spooning a few dollops onto each plate, spreading it out to create a base for the figs. Arrange the figs on top of the ricotta. Sprinkle with some sea salt, drizzle the balsamic syrup over the dish, and finally, garnish with the mint leaves.
