Fig carpaccio with lemon and honey frisee salad
Indulge in the refreshing combination of juicy fig slices paired with zesty lemon and sweet honey dressed frisée salad. A burst of flavors in every bite!
Ingredients:
- 6 large fresh figs
- 1 handful head of frisee lettuce
- zest of 1 lemon
- juice of 2 lemons
- 1 small diced small shallot
- 2 teaspoons of grainy mustard
- 1/4 cup honey
- 1/2 cup olive oil
- 1 cup walnuts
- 1/3 cup brown sugar
- 1/4 cup shaved parmesan cheese
- 1 julienne slice of Prosciutto ham
- fresh chervil leaves for garnish
- lemon twists for garnish
- Kosher salt and fresh cracked pepper to taste
Instructions:
- Heat walnuts and brown sugar in a saute pan over high heat, stirring constantly until the sugar has melted. Once the walnuts are coated, transfer them to a sheet pan lined with parchment paper to cool and set.
- Combine lemon zest, lemon juice, shallots, mustard, honey, olive oil, salt, and pepper in a large bowl to create a lemon and honey vinaigrette. Set the vinaigrette aside.
- Slice the figs thinly lengthwise using a mandolin slicer.
- Mix the frisee with parmesan, prosciutto, salt, pepper, and the lemon and honey vinaigrette until the salad is evenly coated.
- To Serve: Arrange the thinly sliced figs on the plate in a fan shape and place the salad in the middle. Top with parmesan slices and candied walnuts as a garnish.
