Fennel, radish and chive salad

Discover the refreshing crunch of fennel, the peppery bite of radish, and the delicate onion flavor of chive in this vibrant and zesty salad.

Ingredients:

  • 1 head Bibb lettuce (Boston lettuce)
  • 4 large white button mushrooms, brushed clean (about 140g)
  • 4 large red radishes, trimmed
  • 1 small bulb fennel, top trimmed
  • 6 tablespoons extra-virgin olive oil
  • 2 1/2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh chives
  • Zest of 1 large lemon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions:

  1. Rip the lettuce into pieces that are around 1 inch in size and place them in a spacious bowl. Slice the mushrooms, fennel, and radishes thinly, approximately 1/8 inch thick, using a knife or a mandoline slicer. Put them into the bowl with the lettuce.
  2. Combine the oil, lemon juice, chopped chives, lemon zest, salt, and pepper in a compact bowl and mix well. Pour the dressing over the salad and mix everything together.
  3. Separate the salad into 4 portions and serve on individual plates.
