Fennel, radish and chive salad

Ingredients:
- 1 head Bibb lettuce (Boston lettuce)
- 4 large white button mushrooms, brushed clean (about 140g)
- 4 large red radishes, trimmed
- 1 small bulb fennel, top trimmed
- 6 tablespoons extra-virgin olive oil
- 2 1/2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh chives
- Zest of 1 large lemon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions:
- Rip the lettuce into pieces that are around 1 inch in size and place them in a spacious bowl. Slice the mushrooms, fennel, and radishes thinly, approximately 1/8 inch thick, using a knife or a mandoline slicer. Put them into the bowl with the lettuce.
- Combine the oil, lemon juice, chopped chives, lemon zest, salt, and pepper in a compact bowl and mix well. Pour the dressing over the salad and mix everything together.
- Separate the salad into 4 portions and serve on individual plates.
