Fennel, radicchio and apple salad

Tangy and crisp fennel, radicchio, and apple salad. A perfect blend of flavors and textures, drizzled with a zesty vinaigrette. Ideal for a light and refreshing meal.

Ingredients:

  • 1 Medium head radicchio, cored and thinly sliced
  • 1 bunch large fennel bulb, thinly sliced with a mandoline
  • 1 large, crisp sweet red apple, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 shallot, finely minced
  • 1 pinch salt
  • Freshly ground black pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 1/3 cup chopped pecans, toasted

Instructions:

  1. Mix together the radicchio, fennel and apple in a spacious bowl.
  2. Whisk the vinegar, mustard, shallot, salt and pepper in a separate bowl.
  3. Slowly blend in the olive oil, then drizzle half of the dressing over the vegetables and mix well.
  4. Sample the salad, and add more dressing slowly until it suits your preference. Decorate with the saved fennel fronds and pecans.
