Fennel, mint & clementine salad

Ingredients:

  • 75g flat rice noodles
  • ½ tsp caster sugar
  • 1 garlic clove, finely chopped
  • 1 tbsp lime juice
  • 2 tsp fish sauce
  • 1½ tbsp rapeseed oil
  • 1 red chilli, finely sliced
  • 1 small fennel bulb, finely sliced
  • small handful of mint leaves, roughly chopped
  • 2 clementines, segmented
  • 2 cooked chicken breasts, shredded

Instructions:

  1. Prepare the noodles according to the package directions, then strain, wash with cold water, and let them strain again. Mix together the sugar, garlic, lime juice, fish sauce, oil, and chili in a spacious bowl. Season to your liking and adjust the ingredients as necessary – the dish should have a balance of saltiness, sweetness, spiciness, and sourness. Include the fennel, mint, clementines, and noodles, then mix gently. Incorporate the shredded chicken. The dish can be refrigerated for up to one day.
