Fennel & grapefruit salad
Savor the refreshing combination of crisp fennel and tangy grapefruit in this vibrant salad. Perfect for a light and zesty summer dish.
Ingredients:
- 1 large grapefruit
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon ground pepper
- 1 tablespoon plus 1 teaspoon canola oil
- 1 small fennel bulb, cored and thinly sliced, plus fennel fronds for garnish
- 1 medium Granny Smith apple, cored and thinly sliced
- 1 tablespoon toasted sunflower seeds
Instructions:
- Grate the outer skin of the grapefruit into a large bowl until you have 1 tablespoon of grated outer skin.
- Over a small bowl, carefully slice the grapefruit into wedges. Further cut the wedges into smaller pieces; keep them aside. Extract 2 tablespoons of juice from the remaining parts of the grapefruit into the large bowl with the grated outer skin.
- Combine honey, mustard, salt, and pepper into the large bowl; mix well. Slowly add the oil, stirring until everything is mixed together.
- Introduce fennel, apple, and the set aside grapefruit into the bowl and mix until well combined. Sprinkle with sunflower seeds. Optionally, decorate with fennel leaves.
